INGREDIENTS

  • 3/4 cupful milk
  • 1/2 cupful melted Crisco (vegetable shortening)
  • 1/2 cake compressed yeast
  • 1 teaspoonful salt
  • 2 eggs
  • 1 cupful sugar
  • 1 teaspoonful lemon extract
  • 1/4 cupful chopped English walnut meats
  • Flour

 

INSTRUCTIONS

  1. Begin by slightly heating the milk and adding enough flour to make a batter. Dissolve the compressed yeast in a little lukewarm water and add it to the batter. Allow the mixture to rise until it becomes light and frothy.
  2. Incorporate the melted Crisco, well-beaten eggs, sugar, lemon extract, salt, and enough flour to form a stiff dough. The Crisco adds moisture and richness to the dough, while the eggs contribute to its structure.
  3. Knead the dough for approximately ten minutes until it becomes smooth and elastic. This step helps develop the gluten in the dough, ensuring a desirable texture.
  4. Allow the dough to rise until it becomes light and doubles in size. This process allows the yeast to work its magic, creating airy pockets within the bread.
  5. Place the risen dough in a Criscoed pan and let it rise again. This secondary rise further develops the flavor and texture of the bread.
  6. Spread melted Crisco over the risen dough and sprinkle it with sugar, cinnamon, and the chopped English walnut meats. This topping adds a layer of sweetness and texture to the bread.
  7. Bake the Coffee Bread in a preheated hot oven at around 375°F (190°C) for approximately half an hour. The bread should turn golden brown and have a lovely aroma.
  8. Once baked to perfection, remove the Coffee Bread from the oven and allow it to cool on a wire rack.
