Coffee cake, which often contains coffee-infused elements, became popular during the coffeehouse culture of the late 19th century. The blend of coffee with cake not only added flavor but also complemented the experience of enjoying coffee itself, making it a staple in coffeehouses and homes alike.

Chocolate cake, on the other hand, has a long history dating back to the 18th century. However, it was during the 20th century that chocolate cake recipes began to include coffee as an enhancer for its rich chocolate flavor.

The combination of coffee and chocolate in cakes emerged as a delightful way to bring out the best in both ingredients, enhancing the complexity of flavors and creating a dessert that stands out as a favorite among many.

 

INGREDIENTS

For the Cake:

  • 2 cups cake flour
  • ¾ cup cocoa
  • 1½ teaspoons baking soda
  • ¾ teaspoon salt
  • ¾ cup butter, room temperature
  • 2 cups golden brown sugar
  • 3 large eggs
  • 1½ teaspoons vanilla extract
  • 1 cup buttermilk
  • 4 teaspoons instant espresso powder dissolved in ¾ cup hot water

 

For the Peanut Butter Frosting:

  • 1½ cups butter, softened
  • 1½ cup creamy peanut butter
  • 4½ cups powdered sugar
  • 4 tsp dark rum
  • 3 tsp vanilla
  • 6 Tbsp heavy cream

 

For the Rum Drizzle:

  • ¾ cup brown sugar
  • ½ cup Dark Rum
  • 1 tablespoon unsalted butter

 

INSTRUCTIONS

Cake Layers:

  1. Preheat the oven to 325 degrees. Butter two 9-inch cake pans and dust with cocoa. Line the bottom of the pans with parchment paper.
  2. Sift cake flour, cocoa, baking soda, and salt into a medium bowl.
  3. Using an electric mixer, beat the butter until smooth. Add brown sugar and beat until well blended.
  4. Add eggs, one at a time, beating well after each addition. Mix in vanilla.
  5. Add flour mixture in 3 additions alternately with buttermilk in 2 additions, beating just until blended after each addition.
  6. Gradually add the hot espresso-water mixture, beating just until smooth.
  7. Divide the batter between pans and bake until a tester inserted comes out clean. Cool the cakes in pans, then invert them onto wire racks to cool completely.
  8. Cut each cake layer in half.

 

Peanut Butter Frosting:

  1. In the bowl of a stand mixer, cream together peanut butter and butter until smooth.
  2. Add powdered sugar and mix on high until combined.
  3. Add rum, vanilla, and heavy cream. Beat until smooth and fluffy.

 

Rum Drizzle:

  1. Heat all the ingredients in a saucepan until bubbly and cook for one minute. Cool completely.

 

Putting it all together:

  1. Spread a tablespoon of frosting in the middle of your cake plate to hold the cake in place.
  2. Place one cake layer in the middle of the plate and drizzle rum syrup over it. Spread frosting on the cake layer.
  3. Repeat with the remaining cake layers and frosting. Swirl frosting over the top of the cake and pipe rosettes or dollop additional frosting in the center.
  4. Gently pour the rum drizzle over the cake, letting it pool on top and drip down the sides.
