Coconut pie is a delectable dessert that has a rich history and a mouthwatering story behind its creation. This delightful pie showcases the tropical flavors of coconut, combined with a creamy custard filling, all nestled in a flaky pie crust. It has become a beloved classic in many cultures, especially in regions where coconuts are abundant.

The origins of coconut pie can be traced back to the tropical regions of Southeast Asia, where coconuts have been a staple in the local cuisine for centuries. The abundance of coconuts in these regions led to the creation of various coconut-based dishes, including desserts.

As trade routes expanded during the Age of Exploration, coconuts made their way to different parts of the world, including Europe and the Americas. European explorers and colonizers were fascinated by the exotic flavors of the coconut and eagerly incorporated it into their culinary traditions.

The fusion of traditional European baking techniques with the exotic coconut resulted in the birth of coconut pie. The creamy custard filling was inspired by various European custard tarts, while the use of coconut gave it a distinct tropical twist.

Over time, coconut pie evolved and adapted in different cultures, each adding its unique touch to the recipe. Today, coconut pie is a beloved dessert enjoyed worldwide, bringing the taste of the tropics to dessert tables everywhere.

 

 

INGREDIENTS

  • 1/2 cup sugar
  • 1/4 cup cornstarch
  • 2 cups whole milk
  • 4 egg yolks
  • 1 whole egg
  • 3 tablespoons unsalted butter
  • 1 cup toasted coconut, plus more for garnish
  • 1 teaspoon vanilla extract
  • 1 9-inch pie crust, baked according to package directions
  • Fresh whipped cream or meringue, for topping

 

INSTRUCTIONS

  1. In a heavy saucepan, whisk together the 1/2 cup of sugar and 1/4 cup of cornstarch until well combined.
  2. In a separate bowl, whisk together the 2 cups of whole milk, 4 egg yolks, and 1 whole egg until the mixture is smooth and uniform. Gradually pour the egg mixture into the sugar mixture in the saucepan, while whisking constantly to avoid lumps.
  3. Place the saucepan over medium heat and continue whisking the mixture until it comes to a boil. It is important to keep stirring to prevent the eggs from scrambling. Once the mixture boils, let it continue to boil for 1 minute while continuing to whisk.
  4. Remove the saucepan from the heat and stir in the 3 tablespoons of unsalted butter, 1 cup of toasted coconut, and 1 teaspoon of vanilla extract. Ensure that all the ingredients are well combined.
  5. Cover the filling with plastic wrap, placing the plastic wrap directly on the surface of the custard to prevent a skin from forming. Allow the filling to stand for 30 minutes to cool and thicken.
  6. Spoon the prepared custard filling into the 9-inch baked pie crust, spreading it out evenly.
  7. Cover the pie and place it in the refrigerator to chill for at least 30 minutes or until the filling has set.
  8. Before serving, top the coconut pie with fresh whipped cream or meringue, and sprinkle some additional toasted coconut on top for added texture and flavor.
  9. If you chose to use meringue, preheat your oven to 325°F (165°C). Spread the meringue over the pie, ensuring it covers the entire surface and seals the edges. Bake the pie in the preheated oven for 12 to 15 minutes or until the meringue turns golden brown.
