INGREDIENTS

  • 6 Red waxy potatoes
  • Juice of 2 lemons
  • 1 Clove garlic, finely minced
  • 2 Green onions, chopped
  • ¼ Cup fresh mint, chopped
  • 1 tsp Sumac
  • ½ tsp Chili pepper
  • ¼ Cup parsley (stalks removed), chopped

 

INSTRUCTIONS

  1. Wash, scrub, and slice the potatoes unpeeled.
  2. Steam the potatoes for about 15 minutes (don’t overcook).
  3. Make a dressing by mixing all of the remaining ingredients.
  4. Pour the dressing over the warm potatoes.
  5. Toss gently.
  6. Serve alongside the fish.
