Citrus Chicken Fajitas are a vibrant and flavorful dish that combines tender strips of chicken breast with a colorful array of peppers and onions. The chicken and vegetables are marinated in a zesty and refreshing citrus-based marinade, which adds a tangy and aromatic element to the fajitas. The history of chicken fajitas can be traced back to the ranching communities of West Texas and Northern Mexico. In the early days, tough cuts of beef, such as skirt steak, were commonly used to make fajitas. However, over time, chicken became a popular alternative due to its affordability and versatility.

INGREDIENTS

  • 6 tablespoons lemon juice
  • ¼ cup lime juice
  • 2 tablespoons minced fresh cilantro
  • 1 tablespoon olive oil
  • 1 teaspoon sugar
  • ½ teaspoon garlic powder
  • ½ teaspoon ground cumin
  • 1 pound boneless skinless chicken breasts, cut into strips
  • 1 each medium green, sweet red, and yellow peppers, julienned
  • 1 large red onion, halved and thinly sliced
  • 4 flour tortillas (8 inches), warmed
  • ½ cup shredded lettuce
  • ¼ cup sliced ripe olives
  • ¼ cup shredded reduced-fat cheddar cheese

 

INSTRUCTIONS

  1. In a small bowl, combine the lemon juice, lime juice, minced cilantro, olive oil, sugar, garlic powder, and ground cumin. Divide the marinade equally between two large resealable plastic bags. Add the chicken strips to one bag and the julienned peppers and onion to the other bag. Seal the bags and turn to coat. Refrigerate for several hours or overnight to marinate.
  2. Drain the chicken and vegetables, discard the marinade. In a large nonstick skillet coated with cooking spray, cook and stir the chicken over medium heat for 3 minutes. Add the vegetables to the skillet and cook for an additional 3-5 minutes, or until the chicken is no longer pink and the vegetables are crisp-tender.
  3. Spoon the chicken and vegetable filling onto the warm flour tortillas. Top with shredded lettuce, sliced olives, and shredded reduced-fat cheddar cheese. Roll up the tortillas.

 

OPTIONAL VARIATON:

  • Citrus Veggie Chicken Fajitas: Add 1 small julienned zucchini and 1 small julienned yellow summer squash to the peppers. Marinate and cook as directed.
