Citrus-Almond Pizzelle

I am a self-taught cook. I started cooking around 18 years old. I stood in the kitchen and watched my mother, who was my biggest inspiration at the time, cook.

Traditional pizzelle are flavoured with anise, but we love our zesty citrus version. If you prefer a more classic flavour, replace the orange and lemon zests with 2 teaspoonfuls of crushed anise seeds, and the almond extract with anise extract.

Makes about 40 pizzelle

PREP TIME: 20 minutes
CHILLING TIME: 15 minutes
COOKING TIME: about 40 seconds per batch

 

INGREDIENTS

  • 2 cups plus 1 Tbsp all-purpose flour
  • 2 ½ tsp baking powder
  • ¼ tsp baking soda
  • 1 cup granulated sugar
  • 4 large eggs
  • 1 Tbsp liquid honey
  • ⅔ cup unsalted butter, melted and cooled
  • 2 tsp finely grated orange zest
  • 2 tsp finely grated lemon zest
  • 1 tsp almond extract
  • ½ tsp vanilla extract
  • Pinch of fine sea salt
  • Nonstick baking spray

 

INSTRUCTIONS

  1. In a medium bowl, whisk together the flour, baking powder and baking soda. Set aside.
  2. In a large bowl and using an electric mixer, beat together the sugar, eggs and honey until pale, about 2 minutes.
  3. With the mixer running, slowly add the butter, beating until thoroughly combined.
  4. Beat in the orange and lemon zests, almond and vanilla extracts and salt.
  5. Using a rubber spatula, fold the flour mixture into the egg mixture until well combined and no white streaks remain.
  6. Cover the bowl tightly with plastic wrap and refrigerate the batter for 15 minutes.
  7. Preheat a pizzelle iron.
  8. Once the batter has chilled and the pizzelle iron is hot, spray the cooking surfaces of the iron with baking spray. Place a heaping teaspoonful of the batter into the centre of each cooking surface on the iron. Close the lid, then cook until the pizzelle are crisp and golden, 35 to 40 seconds.
  9. Remove the pizzelle to a wire rack and let cool completely. Repeat with the remaining batter.
  10. The pizzelle can be stored, with parchment or wax paper between the layers, in an airtight container at room temperature for up to 1 week.
