INGREDIENTS

  • 1 yeast cake
  • 6 tablespoonfuls sugar
  • 3/4 cupful Crisco
  • 1/2 cupful raisins
  • 1/4 cupful chopped citron peel
  • 1 teaspoonful lemon extract
  • 1 cupful scalded milk
  • 1 egg
  • 5-1/2 cupfuls flour
  • 1/4 cupful lukewarm water
  • 1 teaspoonful salt

 

INSTRUCTIONS

  1. Begin by scalding the milk and adding half of the sugar and the salt. Once lukewarm, add the yeast dissolved in lukewarm water and 1-1/2 cupfuls of flour. Mix well, cover, and allow the mixture to rise until light.
  2. Once the mixture has risen, incorporate Crisco, the remainder of the sugar, and the remaining flour. Add raisins, chopped citron peel, and lemon extract. Knead the mixture lightly to distribute the ingredients evenly.
  3. Cover the dough and allow it to rise again, embracing the alchemical process of fermentation.
  4. After the dough has risen, divide it into small pieces and let them rise on greased tins, providing the buns with their characteristic shape.
  5. Brush the tops of the buns with a beaten egg, adding a glossy finish that enhances their appearance.
  6. Bake the Citron Buns in a hot oven for approximately twenty minutes, until they achieve a golden-brown color and an irresistible aroma fills the air.
  7. Once baked, remove the buns from the oven and allow them to cool slightly before indulging in their delightful taste.
