INGREDIENTS:
- 3/4 cup coconut oil
- 2 onions, chopped
- 2 cloves garlic, minced
- 1 bunch fresh parsley, chopped
- 1 1/2 cups stewed tomatoes
- 1 1/2 cups chicken broth
- 2 bay leaves
- 1 tbsp. dried basil
- 1/2 tsp. dried thyme
- 1/2 tsp. dried oregano
- 1 cup water
- 1 1/2 cups white wine
- 1 1/2 pounds peeled and deveined large shrimp
- 1 1/2 pounds bay scallops
- 18 small clams
- 18 cleaned and debearded mussels
- 1 1/2 cups crabmeat
- 1 1/2 pounds cod fillets, cubed
INSTRUCTIONS:
- Over medium heat, melt coconut oil in a large stockpot and add chopped onions, minced garlic, and chopped parsley. Cook slowly, stirring occasionally until the onions are soft.
- Add stewed tomatoes to the pot, followed by chicken broth, dried oregano, bay leaves, dried basil, dried thyme, water, and white wine. Mix well, cover, and simmer for 30 minutes.
- Stir in the shrimp, bay scallops, clams, mussels, and crabmeat. Then, add the cubed cod fillets. Stir everything together gently.
- Bring the mixture to a boil, then lower the heat, cover the pot, and simmer until the clams open and the seafood is cooked through. This should take about 5-7 minutes.
- Once the clams have opened and the seafood is fully cooked, remove the pot from the heat.
- Serve the seafood stew hot, garnished with additional chopped parsley if desired. Enjoy this flavorful and hearty seafood feast!
