I am a self-taught cook. I started cooking around 18 years old. I stood in the kitchen and watched my mother, who was my biggest inspiration at the time, cook.

While brewing in its pot, this tea’s wonderful and unexpected aroma is enticing. A favored spice among Middle Eastern Arabs and used, mostly, in making desserts, cinnamon is used to make this delicious tea in Kuwait and in most of the other countries along the Arabian Gulf.

Makes four 8-oz (250-ml) servings

PREP TIME: 5 minutes
COOKING TIME: 25 minutes

 

INGREDIENTS

  • 4 cups (1 liter) water
  • 4 cinnamon sticks, each about 3-in (7.5-cm) long
  • 1 tablespoon sugar

 

INSTRUCTIONS

  1. Bring the water and cinnamon to a boil in a medium saucepan with a lid.
  2. Cover and brew over medium heat for 20 minutes.
  3. Remove the cinnamon sticks.
  4. Stir in the sugar and boil for 1 minute before serving.
