Cinnamon Raisin Bread

Sweet and cinnamony! Have a slice of this toasted and slathered with butter for breakfast, and you’ll never know you’re on a low-carb diet!

Yield: 12 slices, each with 6 grams of carbohydrates and 0.6 grams of fiber, for a total of 5.4 grams of usable carbs and 19 grams of protein.

 

INGREDIENTS 

  • 3/4 cup plus 2 tablespoons warm water
  • 1/4 cup oat bran
  • 1/2 cup ground almonds
  • 1/3 cup vanilla-flavored whey protein powder
  • 1 1/2 teaspoons cinnamon
  • 3/4 cup plus 3 tablespoons vital wheat gluten
  • 1/4 cup Splenda
  • 1 tablespoon oil
  • 1 teaspoon salt
  • 2 teaspoons yeast
  • 2 tablespoons raisins, each snipped in half

 

INSTRUCTIONS 

  1. Put the ingredients (except for the raisins) in your bread machine in the order given, and run the machine.
  2. When the machine beeps for adding additional ingredients, add the raisins.
  3. Remove the loaf from the machine and bread case promptly to cool.
