Pesto originated in Italy and is traditionally made with basil, garlic, pine nuts, Parmesan cheese, and olive oil. INGREDIENTS

  • 1 package (6 ounces) fresh baby spinach
  • 2 cups fresh cilantro leaves
  • 1/3 cup grated Romano cheese
  • 1/3 cup salted pumpkin seeds or pepitas, toasted
  • 3 to 4 garlic cloves
  • 2 tablespoons lime juice
  • 1 tablespoon lemon juice
  • 1/8 teaspoon salt
  • 3 tablespoons olive oil

 

INSTRUCTIONS

  1. Place the fresh baby spinach, cilantro leaves, grated Romano cheese, toasted pumpkin seeds, and garlic cloves in a food processor.
  2. Cover the food processor and pulse the ingredients just until they are chopped and well combined. You want to maintain some texture in the pesto.
  3. Add the lime juice, lemon juice, and salt to the food processor.
  4. Cover the food processor again and process the ingredients until they are fully blended and reach a smooth consistency.
  5. While the food processor is running, gradually add the olive oil in a steady stream. This will help emulsify the pesto and create a smooth texture.
  6. Once the Cilantro Pepita Pesto is well blended, transfer it to an airtight container and store it in the refrigerator.
