Here are some variations of the peanut butter and strawberry rice cake recipe:

  1. Peanut Butter and Banana: Replace the chopped strawberries with slices of ripe banana. The combination of peanut butter and banana is a classic and delicious option.
  2. Peanut Butter and Apple: Swap the strawberries for thinly sliced apple. You can use sweet varieties like Honeycrisp or Fuji for a delightful flavor contrast.
  3. Nutella and Strawberry: Instead of peanut butter, spread Nutella (chocolate hazelnut spread) on the rice cake and top it with chopped strawberries. This gives a decadent chocolate twist to the original recipe.
  4. Almond Butter and Raspberry: Use almond butter as an alternative to peanut butter and add fresh raspberries on top. The nutty flavor of almond butter pairs wonderfully with the tartness of raspberries.
  5. Greek Yogurt and Mixed Berries: Instead of peanut butter, spread Greek yogurt on the rice cake and add a mix of fresh berries like blueberries, raspberries, and blackberries for a creamy and fruity delight.
  6. Cashew Butter and Mango: Try cashew butter with slices of ripe mango. The creamy and buttery cashew flavor complements the tropical sweetness of mango.
  7. Coconut Cream and Pineapple: Use coconut cream as a dairy-free option and top it with diced pineapple for a tropical and refreshing rice cake treat.
  8. Sunflower Seed Butter and Cherry: Opt for sunflower seed butter instead of peanut butter and add fresh cherries on top. This combination offers a nut-free and fruity flavor profile.
  9. Honey and Pear: Instead of peanut butter, drizzle honey over the rice cake and top it with slices of ripe pear. The natural sweetness of honey and the juicy pear create a delightful combination.
  10. Cream Cheese and Blueberry: Spread cream cheese on the rice cake and add a generous amount of fresh blueberries. The creamy cheese pairs perfectly with the burst of flavor from the blueberries.
  11. Avocado and Mango Salsa: Mash ripe avocado onto the rice cake and add a spoonful of fresh mango salsa on top. This unique combination offers a creamy, savory, and fruity experience.
  12. Almond Butter and Fig: Use almond butter and add sliced fresh figs on top. The nutty almond flavor complements the sweet and slightly nutty taste of fresh figs.
