Gateau (pronounces ga-tow) is the French word for any rich and fancy cake. I think you’ll agree this dense chocolate dessert has just the right amount of sweetness.

Chocolate Hazelnut Gateau is a rich and indulgent dessert that combines the flavors of chocolate and toasted hazelnuts. The word “gateau” is derived from the French language, meaning a cake or pastry.

The combination of chocolate and hazelnuts has been a beloved pairing in the culinary world for centuries. Hazelnuts have a sweet and nutty flavor that pairs exceptionally well with the smooth and decadent taste of chocolate.

The origins of the Chocolate Hazelnut Gateau are not specifically documented, but it is believed to have evolved from traditional European cake recipes. The gateau gained popularity as a classic dessert, particularly in France and other European countries known for their love of fine pastries and confections.

INGREDIENTS

  • ⅔ cup butter, softened
  • ¾ cup sugar
  • 3 eggs, separated
  • 1 cup (6 ounces) semisweet chocolate chips, melted and cooled
  • 1 teaspoon vanilla extract
  • ¾ cup all-purpose flour
  • ½ teaspoon salt
  • ¼ cup milk
  • ⅔ cup ground hazelnuts, toasted

 

FOR GLAZE:

  • 3 tablespoons butter
  • 2 tablespoons light corn syrup
  • 1 tablespoon water
  • 1 cup (6 ounces) semisweet chocolate chips
  • Toasted slivered almonds and fresh mint leaves (for garnish)

 

INSTRUCTIONS

  1. Prepare the batter:
    • In a large bowl, cream together the softened butter and sugar until light and fluffy.
    • Beat in the egg yolks, melted chocolate chips, and vanilla extract.
    • In a separate bowl, combine the all-purpose flour and salt. Gradually add the dry ingredients to the creamed mixture alternately with the milk, beating well after each addition.
    • Stir in the ground hazelnuts.
  2. Fold in the egg whites and bake:
    • In a small bowl, beat the egg whites until stiff peaks form.
    • Carefully fold the beaten egg whites into the batter.
    • Spread the batter into a greased 9-inch springform pan and place the pan on a baking sheet.
    • Bake the gateau in a preheated oven at 350°F (175°C) for 30-35 minutes or until a toothpick inserted near the center comes out clean.
    • Allow the gateau to cool on a wire rack for 10 minutes. Carefully run a knife around the edge of the pan to loosen, then remove the sides of the pan. Let the gateau cool completely.
  3. Prepare the chocolate glaze:
    • In a saucepan, bring the butter, light corn syrup, and water to a boil, stirring constantly.
    • Remove the saucepan from the heat and add the semisweet chocolate chips. Stir until the chocolate chips are completely melted and the mixture is smooth.
    • Allow the glaze to cool to room temperature.
  4. Assemble and garnish:
    • Spread the cooled chocolate glaze over the top and sides of the gateau, using a spatula or a butter knife to ensure even coverage.
    • Garnish the gateau with toasted slivered almonds and fresh mint leaves for an elegant touch.
