INGREDIENTS

For Strawberry Buttercream:

  • 1 cup butter
  • 1 two-pound bag powdered sugar (about 7-8 cups)
  • 2 teaspoons strawberry extract
  • 4 tablespoons milk
  • Dash of salt
  • 1-2 drops pink food coloring

 

For Vanilla Buttercream:

  • 1 cup (2 sticks) unsalted butter, softened
  • 6-8 cups confectioner’s sugar
  • 1/2 cup milk
  • 2 teaspoons vanilla extract

 

For Chocolate Buttercream:

  • 1 cup unsalted butter (2 sticks) at room temperature
  • 4 cups powdered sugar
  • 1/2 cup good quality cocoa powder
  • 1/2 teaspoon table salt
  • 2 teaspoons vanilla extract
  • 1/2 cup whole milk or heavy cream

 

INSTRUCTIONS

Strawberry Buttercream:

  1. In a mixer, combine room temperature butter, strawberry extract, and salt.
  2. Gradually add in powdered sugar, one cup at a time, alternating with milk until fully incorporated.
  3. Add pink food coloring drop by drop until the desired color is achieved.
  4. Adjust the consistency with more milk if needed for piping roses using the 1M or 2D tip.

 

Vanilla Buttercream:

  1. In a large mixing bowl, combine 4 cups of confectioner’s sugar with softened butter.
  2. Stir in milk and vanilla.
  3. Beat on medium speed until smooth and creamy, 3-5 minutes. Gradually add the remaining sugar as needed for the desired consistency.

 

Chocolate Buttercream:

  1. Place room temperature butter and vanilla in a stand mixer and beat at medium-high speed for about three minutes until light and fluffy.
  2. In a separate bowl, whisk together powdered sugar, cocoa, and salt (or sift them).
  3. With the mixer off, add one cup of the powdered sugar and cocoa mixture, then turn the mixer on low and slowly add the remaining mixture, one cup at a time.
  4. With the mixer still on low, add the milk. Turn the mixer to medium-high and blend for at least two minutes until the frosting appears light and fluffy.
