Chocolate-Covered Buckeyes are a classic and irresistible treat that combines the creamy richness of peanut butter with a smooth chocolate coating. These bite-sized delights resemble the nuts of the buckeye tree, which is native to the Ohio region, giving them their name. Chocolate-Covered Buckeyes are a beloved dessert, particularly in the Midwest United States, and are often enjoyed during the holiday season or as a special indulgence. With a sweet and creamy peanut butter filling enrobed in a layer of decadent chocolate, these treats are sure to satisfy any sweet tooth.

The origin of Chocolate-Covered Buckeyes can be traced back to the state of Ohio in the United States. Buckeye trees are prevalent throughout Ohio, and their nuts resemble the eye of a deer or buck, hence the name “buckeyes.” This inspired the creation of a confection that resembled the buckeye nut, which eventually became known as Chocolate-Covered Buckeyes.

INGREDIENTS

  • 5½ cups confectioners’ sugar
  • 1⅔ cups peanut butter
  • 1 cup butter, melted
  • 4 cups (24 ounces) semisweet chocolate chips
  • 1 teaspoon shortening

 

INSTRUCTIONS

  1. In a large bowl, combine the confectioners’ sugar, peanut butter, and melted butter. Beat the mixture until smooth and well combined. Shape the mixture into 1-inch balls and set them aside.
  2. In a microwave-safe bowl, melt the semisweet chocolate chips and shortening together until smooth, stirring occasionally. Dip each prepared peanut butter ball into the melted chocolate, allowing any excess chocolate to drip off. Place the dipped balls on a wire rack set over waxed paper to allow excess chocolate to drain. Refrigerate the dipped buckeyes for about 15 minutes or until the chocolate coating is firm. Once firm, cover and store the Chocolate-Covered Buckeyes in the refrigerator.
  3. The Chocolate-Covered Buckeyes are now ready to be enjoyed. These delectable treats make a delightful addition to dessert tables, holiday gatherings, or as homemade gifts for friends and family. The combination of creamy peanut butter and smooth chocolate creates a flavor harmony that is simply irresistible.

Avoid using natural peanut butter varieties that may have a separated texture. Also, make sure to thoroughly mix the peanut butter, melted butter, and confectioners’ sugar until smooth and well combined. This will result in a delicious and easy-to-shape filling.
  • Easy Chocolate Dipping: When dipping the peanut butter balls into the melted chocolate, use a toothpick or a small fork to handle them. Insert the toothpick or fork into the top of the ball and dip it into the melted chocolate, leaving a small portion of the peanut butter exposed to create the “buckeye” appearance. Gently tap the toothpick or fork on the edge of the bowl to remove any excess chocolate and create a smooth coating. Placing the dipped buckeyes on a wire rack set over waxed paper allows the excess chocolate to drain and ensures a neat and even coating. Refrigerating the dipped buckeyes will help the chocolate set quickly and evenly.
