Some sources suggest that the first brownie was created in the late 19th century in the United States when a baker forgot to add baking powder to a chocolate cake, resulting in a dense and fudgy dessert that we now know as the brownie. Over time, brownies evolved into various styles and variations, including the classic chewy and moist version that complements cheesecake beautifully.

Cheesecake, as mentioned before, has ancient origins and was enjoyed by ancient civilizations like the Greeks and Romans. The modern cheesecake, as we know it, is believed to have originated in ancient Greece, where it was made with simple ingredients like cheese, honey, and wheat. Over time, this dessert spread to different cultures and evolved into various versions, including the famous New York-style cheesecake.

The combination of brownies and cheesecake likely began as creative bakers and chefs experimented with different flavors and textures to elevate traditional desserts. By combining the richness of brownies with the creamy smoothness of cheesecake, they created Chocolate Bars Cheesecake, a heavenly dessert that satisfies chocolate cravings and delights cheesecake lovers.

 

 

INGREDIENTS

Brownie Batter:

  • 1 stick (4 ounces) unsalted butter
  • 2 ounces semi-sweet chocolate, chopped
  • 1 cup granulated sugar
  • 2 large eggs + 1 egg yolk
  • 1/2 teaspoon salt
  • 3/4 cup all-purpose flour

 

Cheesecake:

  • 8 ounces full-fat cream cheese, very soft
  • 1/2 cup granulated sugar
  • 1 large egg + 1 egg yolk
  • 12 mini chocolate bars (or 5 regular), roughly chopped, divided

 

Glaze:

  • 1 cup creamy peanut butter
  • 2 tablespoons confectioners’ sugar

 

INSTRUCTIONS

Brownie Batter:

  1. Preheat the oven to 350 degrees (F). Line an 8×8 inch square baking pan with parchment paper; spray parchment paper and any exposed pan lightly with non-stick spray; set it aside.
  2. Melt the butter and chocolate in a small saucepan over medium-low heat, whisking occasionally, until completely melted. Whisk until smooth and remove the pan from heat. Pour the melted chocolate into a large, heatproof bowl and whisk in the sugar, beating well. Add in the eggs and egg yolk and beat until smooth.
  3. Gently whisk in the salt and flour, stirring until just combined. Pour the batter into the prepared baking pan, smoothing the top with a rubber spatula.

 

Cheesecake:

  1. Using a handheld mixer, beat the cream cheese in a large bowl until completely smooth. Add in the sugar and egg yolks and beat until smooth and creamy, about 1 minute. Fold in the chopped chocolate bars, reserving 1/4 cup for later use.
  2. Pour the cheesecake batter on top of the brownie batter. Gently stir with a knife for a marbled look. Bake in the preheated oven for 35 minutes, or until the edges are firm and the center is just set.
  3. Cool the brownie cheesecake bars in the pan, on a wire rack.

 

Glaze:

  1. Place the peanut butter in a small saucepan over medium-low heat, cook, stirring occasionally, until completely melted. Whisk in confectioners’ sugar.
  2. When ready to serve, cut the cheesecake brownies into bars. Sprinkle the top of each bar with a little of the reserved chocolate bars crumble, then drizzle with the peanut butter glaze.
