Serves :6

 

INGREDIENTS:

• 2 tbsp. coconut oil

• 2 onions, chopped

• 3 cloves garlic, minced

• 1 pound ground beef

• 3/4 pound beef sirloin, cubed

• 2 cups diced tomatoes

• 1 cup strong brewed coffee

• 1 cup tomato paste

• 2 cups beef broth

• 1 tbsp. cumin seeds

• 1 tbsp. unsweetened cocoa powder

• 1 tsp. dried oregano

• 1 tsp. ground cayenne pepper

• 1 tsp. ground coriander

• 1 tsp. salt

• 6 cups cooked kidney beans

• 4 fresh hot chili peppers, chopped

 

INSTRUCTIONS:

  1. Heat the coconut oil in a saucepan over medium heat.
  2. Add the minced garlic, chopped onions, cubed beef sirloin, and ground beef to the saucepan. Cook until the meat is browned and the onions are translucent.
  3. Mix in the diced tomatoes, strong brewed coffee, tomato paste, and beef broth.
  4. Season the mixture with oregano, cumin seeds, unsweetened cocoa powder, ground cayenne pepper, ground coriander, and salt.
  5. Stir in the chopped hot chili peppers and 3 cups of cooked kidney beans.
  6. Reduce the heat to low, cover the saucepan, and let the chili simmer for two hours.
  7. After two hours, stir in the remaining 3 cups of cooked kidney beans.
  8. Continue to simmer the chili for another 30 minutes, allowing the flavors to meld together.

Enjoy your delicious and flavorful chili! Serve it with your favorite toppings such as shredded cheese, sour cream, chopped green onions, or tortilla chips.
