Chicken with Cranberries

I am a self-taught cook. I started cooking around 18 years old. I stood in the kitchen and watched my mother, who was my biggest inspiration at the time, cook.

INGREDIENTS

  • 6 boneless, skinless chicken breasts
  • 1 small onion, chopped
  • 1 cup fresh cranberries
  • 1 teaspoon salt
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 3 tablespoons brown sugar or honey
  • 1 cup orange juice
  • 3 tablespoons flour mixed with 2 tablespoons cold water

PREPARATION

  1. Place all ingredients, except flour and water mixture, in the slow cooker or Crock Pot. Cover and cook on low 6 to 7 hours, until chicken is tender.
  2. Add flour mixture in the last 15 to 20 minutes and cook until thickened.
  3. Taste and adjust seasonings.
  4. Serves 4.
