  • Salt and black pepper to taste
  • 3 tablespoons olive oil, divided
  • 1/2 cup prepared basil pesto (store-bought or homemade)
  • 1 cup cherry tomatoes, halved
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup toasted pine nuts
  • 1/4 cup fresh basil leaves, torn
  • Lemon zest (from 1 lemon)
  • Red pepper flakes (optional, for a touch of heat)
  • Extra grated Parmesan cheese (for serving)

 

INSTRUCTIONS 

  1. Cook the pasta in a large pot of salted boiling water according to the package instructions until it’s al dente. Drain the pasta and set it aside.
  2. Season the thinly sliced chicken breasts with salt and black pepper.
  3. In a large skillet, heat 2 tablespoons of olive oil over medium-high heat.
  4. Add the seasoned chicken slices to the skillet and cook for about 4-5 minutes on each side, or until they are cooked through and no longer pink in the center. Once cooked, remove the chicken from the skillet and set it aside.
  5. In the same skillet, add the halved cherry tomatoes and cook for about 2 minutes, just until they begin to soften and release their juices.
