Risotto, a cornerstone of Italian cuisine, has a storied history dating back centuries. Originating in Northern Italy, risotto was initially known as “riso” or rice, and it has been a culinary staple in the region for generations. Traditionally prepared by slowly simmering Arborio rice in a flavorful broth, risotto embodies a comforting and soul-satisfying essence.

INGREDIENTS

  • 1 tbsp olive oil
  • 50g Western Star™ butter
  • 300g chicken, diced
  • 250g button mushrooms, sliced
  • 1 onion, sliced
  • 1 clove garlic, crushed
  • 250g Arborio rice
  • 800ml chicken stock
  • 250g Perfect Italiano™ 4 Cheese Melt

 

INSTRUCTIONS

  1. Preheat the oven to 180°C (356°F).
  2. In a large ovenproof pot, heat olive oil and Western Star™ butter over high heat.
  3. Add diced chicken to the pot and quickly brown it, ensuring a light sear on all sides.
  4. Incorporate the sliced button mushrooms, sliced onion, and crushed garlic into the pot. Continue cooking the mixture until the vegetables are softened and aromatic.
  5. Add Arborio rice to the pot, stirring to coat the rice with the flavors from the chicken and vegetables.
  6. Pour in the chicken stock, allowing the mixture to come to a boil. Stir gently to combine all the ingredients.
  7. Introduce the indulgent Perfect Italiano™ 4 Cheese Melt to the risotto mixture, enhancing its richness and creaminess.
  8. Cover the pot with a lid and carefully transfer it to the preheated oven.
  9. Bake the risotto for approximately 30 minutes, allowing the flavors to meld and the rice to cook to a tender and creamy consistency.
  10. Once the baking time is complete, remove the pot from the oven. Allow the risotto to rest for a few minutes before serving. This resting period allows the flavors to fully develop and ensures a delightful eating experience.
