Mexican Fajitas with Chicken and Vegetables

Fajitas originated in Texas in the 1930s, when cowboys working on ranches would use tough, low-quality cuts of beef (typically from the skirt steak) to make a flavorful and filling meal. The dish has since evolved and become a staple of Tex-Mex cuisine, with chicken, shrimp, and even vegetarian versions now widely available.
The traditional method of cooking fajitas is to grill the chicken and vegetables over an open flame, which creates a smoky and charred flavor. However, fajitas can also be cooked in a skillet on the stovetop, making them a convenient and quick weeknight meal.

Serving and preparation time

Serving size: This recipe makes 8-10 fajitas, enough to serve 4-5 people.
Preparation time: 15-20 minutes
Cooking time: 20-25 minutes
Total time: 35-45 minutes

Ingredients:

  • 1 lb boneless, skinless chicken breasts or thighs, sliced into thin strips
  • 2 bell peppers (any color), sliced into thin strips
  • 1 large onion, sliced into thin strips
  • 2 tbsp olive oil
  • 1 tsp chilli powder
  • 1 tsp ground cumin
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 8-10 flour or corn tortillas
  • Optional toppings: shredded cheese, sour cream, salsa, avocado, etc.

Instructions:

  1. In a large bowl, mix together the chilli powder, cumin, garlic powder, paprika, salt, and pepper.
  2. Add the chicken strips to the bowl and toss to coat evenly with the spices.
  3. Heat the olive oil in a large skillet over medium-high heat.
  4. Add the chicken to the skillet and cook for 3-4 minutes on each side, or until browned and cooked through.
  5. Remove the chicken from the skillet and set it aside.
  6. In the same skillet, add the bell peppers and onion and cook for 3-4 minutes, or until softened.
  7. Return the chicken to the skillet and mix everything together.
  8. Warm the tortillas according to package instructions.
  9. Spoon the chicken and vegetable mixture onto each tortilla and add your desired toppings.
  10. Serve and enjoy!
