Chicken Broth

I am a self-taught cook. I started cooking around 18 years old. I stood in the kitchen and watched my mother, who was my biggest inspiration at the time, cook.

INGREDIENTS

  • 4 lbs. fresh chicken (wings, necks, backs, legs, bones)
  • 2 peeled onions or 1 cup chopped leeks
  • 2 celery stalks
  • 1 carrot
  • 8 black peppercorns
  • 2 sprigs fresh thyme
  • 2 sprigs fresh parsley
  • 1 tsp. salt

 

INSTRUCTIONS :

  1. Put cold water in a stock pot and add the chicken.
  2. Bring the pot to a boil. Skim any foam from the surface.
  3. Add the peeled onions or chopped leeks, celery stalks, carrot, black peppercorns, fresh thyme, fresh parsley, and salt to the pot.
  4. Return the pot to just a boil, and then reduce the heat to a slow simmer.
  5. Simmer the ingredients for 2 hours.
  6. Let the stock cool to warm room temperature.
  7. Strain the stock to remove the solids and retain the flavorful liquid.
  8. Keep the chicken stock chilled and use it or freeze it within a few days.
  9. Before using the frozen stock, defrost it, and boil it again before incorporating it into your recipes.

Here are some variations of the “Allergen-Free Chicken Broth” recipe:

  1. Vegetarian Broth: Omit the chicken and use vegetable broth instead. Add more vegetables like mushrooms, bell peppers, and leeks to enhance the flavor.
  2. Herb-Infused Broth: Experiment with different herbs such as rosemary, sage, or tarragon to add a unique herbal twist to the broth.
  3. Asian-Inspired Broth: Add ginger, garlic, and a splash of soy sauce or tamari for an Asian-flavored broth.

  9. Mexican Chicken Broth: Add cumin, chili powder, and cilantro to give the broth a Mexican-inspired twist.
  10. Italian Chicken Broth: Add oregano, basil, and a splash of balsamic vinegar for an Italian flavor profile.
  11. Coconut Curry Chicken Broth: Add coconut milk, curry powder, and a pinch of turmeric to the broth for a creamy and flavorful coconut curry twist.
  12. Garlic Lover’s Broth: Increase the amount of garlic cloves to create a rich and aromatic garlic-infused broth.
  13. Lemongrass Chicken Broth: Add a few lemongrass stalks to the broth for a refreshing and citrusy flavor.
