Cherry Pie Chimis are a delightful and indulgent dessert that combines the classic flavors of cherry pie with the crispy and golden goodness of a chimichanga. These sweet treats feature a luscious cherry pie filling wrapped in a flour tortilla, deep-fried to perfection, and dusted with a touch of powdered sugar. The combination of warm, gooey cherry filling and crispy exterior makes Cherry Pie Chimis a favorite dessert for any occasion.

Cherry Pie Chimis are a creative twist on traditional cherry pie and the popular Mexican dish, chimichanga. Chimichanga, which means “thingamajig” in Spanish, is a deep-fried burrito typically filled with savory ingredients like meat, beans, and cheese. The origins of the chimichanga are a bit murky, but it is believed to have been created in the border region between Mexico and the United States.

The idea of combining the flavors of cherry pie with the concept of a chimichanga is a fun and delicious fusion of culinary traditions. It’s a delightful way to enjoy the beloved flavors of cherry pie in a handheld and portable form.

INGREDIENTS

  • 2 cans (21 ounces each) cherry pie filling
  • 6 flour tortillas (10 inches)
  • Oil for deep-fat frying
  • Confectioners’ sugar

 

INSTRUCTIONS

  1. Spoon a generous amount of cherry pie filling down the center of each tortilla.
  2. Fold the sides and ends of the tortilla over the filling, creating a compact bundle. Roll up the tortilla tightly to enclose the filling completely. Secure the chimichanga with toothpicks to hold its shape.
  3. Heat oil in an electric skillet or deep fryer to 375°F (190°C).
  4. Carefully place the chimichangas, a few at a time, into the hot oil. Fry for about 2 minutes on each side or until they turn a golden brown color and become crispy.
  5. Once cooked, remove the chimichangas from the oil and drain them on paper towels to remove any excess oil.
  6. Dust the Cherry Pie Chimis with a sprinkle of confectioners’ sugar for a touch of sweetness and a beautiful presentation.
  7. Serve the Cherry Pie Chimis immediately while they are still warm and crispy.
