Cheese Pie, also known as Tiropita in Greek cuisine, is a savory pastry that features a delicious filling made with a combination of feta cheese and Mizythra cheese. This delectable dish is popular in Mediterranean and Middle Eastern cuisines, and its flaky layers of phyllo dough combined with the savory cheese filling make it a delightful treat for any time of the day. Whether served as an appetizer, snack, or part of a larger meal, Cheese Pie has become a beloved dish for its rich flavors and comforting texture.

INGREDIENTS

  • 8 pieces of phyllo dough
  • 300g feta cheese, crumbled
  • 200g Mizythra cheese (or ricotta cheese), crumbled
  • 2 tablespoons olive oil
  • 2 eggs
  • Olive oil for brushing
  • Salt and pepper to taste

 

INSTRUCTIONS

  1. Preheat the oven to 170°C. Lightly oil a square baking pan to prevent sticking.
  2. In a medium bowl, mix together 2 tablespoons of olive oil, eggs, crumbled feta cheese, Mizythra (or ricotta) cheese, and a pinch of salt and pepper. Combine the ingredients until well blended to form the cheese filling.
  3. Lay one sheet of phyllo dough in the prepared baking pan and brush it lightly with olive oil.
  4. Lay another sheet of phyllo dough on top of the first one and brush it with olive oil as well. Repeat this process with two more sheets of phyllo, allowing them to overlap the pan to create layers.
  5. Spread the cheese mixture evenly into the pan over the layered phyllo dough and then fold the overhanging dough over the filling. Brush the top with more olive oil.
  6. Layer the remaining 4 sheets of phyllo dough on top, brushing each sheet with olive oil. Tuck the overhanging dough into the pan to seal the filling securely.
  7. Bake the Cheese Pie in the preheated oven for 30 to 40 minutes, or until the top becomes golden brown and crispy.
  8. Once baked, remove the pie from the oven and cut it into squares. Serve while hot and enjoy the savory goodness of this delightful Cheese Pie.
