Cauliflower rice side dish

Serves :2

 

INGREDIENTS:

  • 1 head cauliflower
  • 2 tbsp coconut oil
  • Sea salt (optional)
  • Garlic powder (optional)
  • Ginger powder (optional)
  • Ground black pepper (optional)

 

INSTRUCTIONS:

  1. Cut the cauliflower into small florets and remove any tough stems.
  2. Place the cauliflower florets into a food processor and pulse it several times until it reaches a grainy, rice-like consistency. Be careful not to over-process it into a puree.
  3. Heat a large sauté pan over high heat and add the coconut oil. Let it melt and coat the bottom of the pan.
  4. Add the riced cauliflower to the pan and sauté over medium-high heat. You can also add any optional seasonings at this point, such as sea salt, garlic powder, ginger powder, or ground black pepper, to enhance the flavor.
  5. Cook the cauliflower for 5-7 minutes, stirring frequently, until it becomes tender but not mushy. Adjust the seasoning to taste, if needed.
  6. Remove the sautéed cauliflower from the pan and serve hot as a delicious and healthy alternative to traditional rice.

  5. Mexican Cauliflower Rice: Sauté the cauliflower rice with diced tomatoes, diced bell peppers, black beans, and taco seasoning for a tasty Mexican-style side dish.
  6. Italian Herb Cauliflower Rice: Mix in Italian seasoning, sun-dried tomatoes, and grated Parmesan cheese for an Italian-inspired cauliflower rice.
  7. Cauliflower Fried “Rice”: Add diced carrots, peas, chopped green onions, and scrambled eggs to the sautéed cauliflower to create a tasty cauliflower fried “rice.”
  8. Curry Cauliflower Rice: Mix in some curry powder, turmeric, and a dash of coconut milk for a flavorful curry cauliflower rice.
  9. Lemon and Herb Cauliflower Rice: Sauté the cauliflower rice with fresh lemon juice, chopped parsley, and cilantro for a refreshing and aromatic side dish.
  10. Cauliflower Rice Stir-Fry: Stir-fry the cauliflower rice with colorful bell peppers, broccoli, snap peas, and your choice of protein for a complete and healthy meal.
  11. Cauliflower Rice Pilaf: Add sautéed onions, toasted slivered almonds, and dried cranberries to the cauliflower rice for a festive and flavorful pilaf.
  12. Spicy Cajun Cauliflower Rice: Season the cauliflower rice with Cajun spices, diced bell peppers, and diced tomatoes for a zesty and spicy twist.
