I am a self-taught cook. I started cooking around 18 years old. I stood in the kitchen and watched my mother, who was my biggest inspiration at the time, cook.

This is higher-carb than plain Cauliflower Rice, but the wild rice adds a grain flavor that makes it quite convincing. Plus, wild rice has about 25 percent less carbohydrates than most other kinds of rice. I only use
this for special occasions, but it’s wonderful.

Yield: 4 cups, or 8 servings, each with 6 grams of carbohydrates and 1 gram of fiber, for a total of 5 grams of usable carbs and 2 grams of protein.

 

INGREDIENTS 

  • 3 cups Cauliflower Rice
  • 1/4 cup wild rice
  • 3/4 cup water

 

INSTRUCTIONS

  1. Cook the cauliflower rice as desired, such as steaming, being careful not to overcook it.
  2. In a saucepan, combine the wild rice and water. Cover and cook over low heat until all the water is gone (at least half an hour).
  3. Combine the cooked cauliflower rice and wild rice in a bowl and season as desired.
