I am a self-taught cook. I started cooking around 18 years old. I stood in the kitchen and watched my mother, who was my biggest inspiration at the time, cook.

A kugel is a traditional Jewish casserole that comes in both sweet and savory varieties. This savory kugel makes a nice side dish with a simple meat course. It could also be served as a vegetarian main dish.

Yield: 9 servings, each with 5 grams of carbohydrates and 2 grams of fiber, for a total of 3 grams of usable carbs and 10 grams of protein.

 

INGREDIENTS 

  • 2 packages (10 ounces each) frozen cauliflower, thawed
  • 1 medium onion, chopped
  • 1 cup cottage cheese
  • 1 cup shredded Cheddar cheese
  • 4 eggs
  • 1/2 teaspoon salt or Vege-Sal
  • 1/4 teaspoon pepper
  • Paprika

 

INSTRUCTIONS 

  1. Preheat the oven to 350°F.
  2. Chop the cauliflower into 1/2-inch pieces.
  3. Combine the cauliflower, onion, cottage cheese, Cheddar cheese, eggs, salt, and pepper in a large mixing bowl, and mix well.
  4. Spray an 8 x 8-inch baking pan with nonstick cooking spray.
  5. Spread the cauliflower mixture evenly on the bottom of the pan.
  6. Sprinkle paprika lightly over the top of the mixture.
  7. Bake for 50 to 60 minutes, or until the kugel is set and lightly browned.
  8. Serve hot and enjoy!
