INGREDIENTS

  • 2 pork tenderloins (about 1 pound each)
  • 1/4 cup apple cider vinegar
  • 1/4 cup Dijon mustard
  • 2 tablespoons honey or brown sugar
  • 2 tablespoons Worcestershire sauce
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • 1/2 teaspoon cayenne pepper (adjust to taste)
  • Salt and black pepper to taste
  • Vegetable oil for cooking

 

INSTRUCTIONS

  1. In a small bowl, whisk together the apple cider vinegar, Dijon mustard, honey or brown sugar, Worcestershire sauce, minced garlic, paprika, dried thyme, cayenne pepper, salt, and black pepper. This mixture will serve as the marinade for the pork tenderloins.
  2. Place the pork tenderloins in a shallow dish or resealable plastic bag. Pour the marinade over the pork, ensuring that all sides are coated. Marinate the pork in the refrigerator for at least 2 hours, or overnight for optimal flavor infusion.
  3. Preheat your grill or oven to medium-high heat.
  4. If grilling, lightly oil the grates to prevent sticking. If using an oven, preheat to 425°F (220°C) and line a baking sheet with aluminum foil for easy cleanup.
  5. Remove the pork tenderloins from the marinade, allowing any excess marinade to drip off. Reserve the marinade for basting.
  6. Grill or roast the pork tenderloins for about 15-20 minutes, turning occasionally, until the internal temperature reaches 145°F (63°C). Baste the pork with the reserved marinade during the cooking process to enhance the flavors and moisture.
  7. Once cooked, remove the pork tenderloins from the grill or oven and let them rest for about 5 minutes. This resting period allows the juices to redistribute, resulting in a moist and tender final product.
  8. Slice the Carolina Marinated Pork Tenderloin into medallions and serve immediately.
  9. For an extra touch of Carolina flavor, you can brush the sliced pork with additional barbecue sauce or serve it with a side of your favorite Carolina-style barbecue sauce.
