Caribbean Chicken salad

I am a self-taught cook. I started cooking around 18 years old. I stood in the kitchen and watched my mother, who was my biggest inspiration at the time, cook.

Serves :2

 

INGREDIENTS:

  • 2 boneless skinless chicken breasts

Marinade:

  • 1/2 cup fish sauce
  • 2 tomatoes (seeded and chopped)
  • 1/2 cup chopped onion
  • 2 tsps. jalapeno chilies (minced)
  • 2 tsps. chopped cilantro (fresh)

Raw Honey Lime Dressing:

  • 1/4 cup mustard
  • 1/4 cup raw honey
  • 1 tbsp coconut oil
  • 1 1/2 tbsps. lemon juice
  • 1 1/2 tsps. lime juice
  • 3/4 lb mixed greens

 

INSTRUCTIONS:

  1. In a small bowl, blend all the marinade ingredients using a hand blender. Cover and chill the marinade. Marinate the chicken breasts for at least two hours in the refrigerator.
  2. Grill the marinated chicken for a few minutes per side or until fully cooked.
  3. Divide the mixed greens into two large salad bowls.
  4. Slice the grilled chicken breasts into thin strips and divide them among the salad bowls.
  5. In a separate bowl, prepare the raw honey lime dressing by mixing mustard, raw honey, coconut oil, lemon juice, and lime juice until well combined.
  6. Pour the dressing over the salads or serve it aside for individual drizzling.
