INGREDIENTS

  • 4 bacon strips
  • 2 pan-dressed trout (1 pound each)
  • 4 lemon slices
  • 1 small onion, halved and sliced
  • ¼ teaspoon salt
  • ⅛ teaspoon pepper
  • 4 medium carrots, thinly sliced
  • ⅛ teaspoon salt
  • Dash pepper
  • 1 tablespoon butter
  • Lemon wedges

 

INSTRUCTIONS

  1. Cook the bacon until it is partially cooked but not yet crisp. Drain the bacon and set it aside for later use.
  2. Place each trout on a double thickness of heavy-duty foil, approximately 20×18 inches in size. Insert a lemon slice and some onion slices into the cavity of each trout. Sprinkle the trout with salt and pepper. Wrap each trout with the partially cooked bacon. Fold the foil around the trout, sealing it tightly.
  3. Place the sliced carrots on a double thickness of heavy-duty foil, approximately 20×18 inches in size. Sprinkle the carrots with salt and pepper, and dot them with butter. Fold the foil around the carrots, sealing it tightly.
  4. Grill the carrots, covered, over medium heat for 10 minutes. Then, add the trout packets to the grill and continue cooking for an additional 20-25 minutes, or until the fish flakes easily with a fork and the carrots are tender.
  5. Once cooked, carefully open the foil packets. Serve the trout and carrots together, accompanied by lemon wedges for added flavor. Enjoy the delicious campfire trout dinner in the great outdoors.
