Butternut squash is a type of winter squash that’s rich in vitamins A and C, as well as dietary fiber and potassium. Its sweet and nutty flavor lends itself well to both savory and sweet dishes. Broccoli is a cruciferous vegetable that’s known for its high content of vitamins K and C, fiber, and antioxidants. Its crisp texture and vibrant color make it a versatile addition to a wide range of dishes.

INGREDIENTS 

  • 2 cups butternut squash, peeled, seeded, and cut into bite-sized cubes
  • 2 cups broccoli florets
  • 2 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce (optional)
  • 1 teaspoon sesame oil
  • 1 teaspoon honey or brown sugar
  • 1/4 cup vegetable broth or water
  • Salt and black pepper to taste
  • Sesame seeds for garnish (optional)
  • Sliced green onions for garnish (optional)

 

INSTRUCTIONS 

  1. Heat a large wok or skillet over high heat. Add the vegetable oil and swirl it to coat the surface of the wok.
  2. Add the butternut squash cubes to the wok. Stir-fry the squash for about 4-5 minutes, or until they begin to soften and develop a light golden color. Use a spatula to keep the squash moving in the wok.
  3. Add the broccoli florets to the wok and continue stir-frying for an additional 3-4 minutes, or until the broccoli becomes bright green and slightly tender.
  4. Create a space in the center of the wok by pushing the vegetables to the sides.
  5. In the center of the wok, add the minced garlic and minced ginger. Sauté them for about 30 seconds, or until fragrant.
  6. Combine the garlic and ginger with the vegetables, tossing them together to distribute the flavors.
  7. In a small bowl, whisk together the soy sauce, oyster sauce (if using), sesame oil, honey or brown sugar, and vegetable broth or water.
  8. Pour the sauce mixture over the vegetables in the wok. Toss everything together to ensure the vegetables are coated with the sauce.
  9. Season the stir-fry with salt and black pepper to taste, adjusting the seasoning as needed.
  10. Once the vegetables are tender and the sauce has coated everything, remove the wok from the heat.
  11. Present the Butternut Squash and Broccoli Stir-Fry on a serving platter, showcasing the colorful blend of vegetables.
  12. If desired, garnish the dish with sesame seeds and sliced green onions for added visual appeal.
  13. Invite your guests to savor the harmonious combination of butternut squash’s sweetness and broccoli’s freshness.
