Buffalo Chicken Wings with The Best Blue Cheese Dressing

INGREDIENTS 

  • 2 pounds chicken wings and drumettes
  • 3 tablespoons melted unsalted butter (or coconut oil if dairy-free)
  • 1 teaspoon fine sea salt
  • ½ teaspoon ground black pepper
  • 1 tablespoon wing sauce or other medium-hot hot sauce, or to taste

 

FOR SERVING

  • ½ batch The Best Blue Cheese Dressing (omit for dairy-free)
  • Celery sticks

 

INSTRUCTIONS

  1. Preheat the oven to 400°F.
  2. Place the chicken wings and drumettes in a large bowl. Add the melted butter and toss to coat the chicken.
  3. Place the buttered chicken on a rimmed baking sheet and season liberally with the salt and pepper.
  4. Bake for 35 to 40 minutes, until the wings are crispy on the edges and cooked through.
  5. Remove the chicken from the oven and brush it with the hot sauce. Serve with the blue cheese dressing and celery sticks.
  6. Store extra wings in an airtight container in the refrigerator for up to 4 days. Reheat the wings on a baking sheet in a preheated 350°F oven for 5 minutes or until warmed through.
