Broccoli with Lemon Butter

I am a self-taught cook. I started cooking around 18 years old. I stood in the kitchen and watched my mother, who was my biggest inspiration at the time, cook.

I’m always bemused when I see frozen broccoli with lemon butter at the grocery store. I mean, how hard is it to add butter and lemon juice to your broccoli?

Yield: 4 servings, each with 6 grams of carbohydrates and 3 grams of fiber, for a total of 3 grams of usable carbs and 3 grams of protein.

 

INGREDIENTS

  • 1 pound frozen broccoli or 1 large head fresh broccoli
  • 4 tablespoons butter
  • 1 tablespoon lemon juice

 

INSTRUCTIONS

  1. Steam or microwave your broccoli until it’s cooked.
  2. Drain off the water.
  3. Toss the broccoli with the butter and lemon juice until the butter is melted.
  4. Serve and enjoy!
