Braised Green Peas with Beef

Serves: 1

 

INGREDIENTS:

  • 1 cup fresh or frozen green peas
  • 1 onion, finely chopped
  • 2 cloves of garlic, thinly sliced and 1/2 inch of peeled/sliced fresh ginger (if you like)
  • 1/2 tsp. red pepper flakes, or to taste
  • 1 tomato, roughly chopped
  • 1 chopped carrot
  • 1 tbsp. coconut oil
  • 1/2 cup chicken broth
  • 4 oz. cubed beef
  • Salt and freshly ground black pepper

 

INSTRUCTIONS:

  1. Heat the coconut oil in a skillet over medium heat.
  2. Sauté the onion, garlic, and ginger until they are soft and fragrant.
  3. Add the red pepper, carrot, and tomatoes to the skillet and sauté until the tomato begins to soften.
  4. Stir in the green peas and cubed beef, ensuring they are evenly distributed.
  5. Pour in the chicken broth and bring the mixture to a simmer over medium heat.
  6. Cover the skillet and cook until the peas are tender and the beef is fully cooked.
  7. Season the dish with salt and freshly ground black pepper according to your taste preferences.
  8. Once the flavors have melded together and the beef is tender, the dish is ready to be served.
