INGREDIENTS

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons paprika
  • 1 tablespoon cayenne pepper
  • 1 tablespoon dried thyme
  • 1 tablespoon dried oregano
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1/2 cup unsalted butter, melted

 

INSTRUCTIONS

  1. Preheat a cast-iron skillet over high heat until it is smoking hot.
  2. In a small bowl, combine the paprika, cayenne pepper, dried thyme, dried oregano, garlic powder, onion powder, salt, and black pepper to create the spice blend.
  3. Pat the chicken breasts dry with paper towels to remove any excess moisture.
  4. Dip each chicken breast into the melted butter, making sure to coat both sides.
  5. Generously coat each chicken breast with the spice blend, pressing it onto the surface to ensure an even coating.
  6. Carefully place the seasoned chicken breasts onto the hot skillet. Be cautious as the skillet may produce smoke due to the high heat.
  7. Cook the chicken for approximately 3-4 minutes on each side, or until the internal temperature reaches 165°F (74°C) when measured with a meat thermometer. The chicken should be well-charred on the outside while remaining tender and juicy inside.
  8. Once cooked, transfer the blackened chicken breasts to a cutting board and let them rest for a few minutes before slicing or serving.
  9. Slice the blackened chicken and serve it hot with your choice of side dishes or use it as a versatile ingredient in other recipes.
