Black Bean Soup

I am a self-taught cook. I started cooking around 18 years old. I stood in the kitchen and watched my mother, who was my biggest inspiration at the time, cook.

Serves : 6-8

 

INGREDIENTS:

  • 1/4 cup coconut oil
  • 1/4 cup Onion, Diced
  • 1/4 cup Carrots, Diced
  • 1/4 cup Green Bell Pepper, Diced
  • 1 cup beef broth
  • 3 pounds cooked Black Beans
  • 1 tbsp. lemon juice
  • 2 teaspoons Garlic
  • 2 teaspoons Salt
  • 1/2 tsp. Black Pepper, Ground
  • 2 teaspoons Chili Powder
  • 8 oz. pork
  • 1 tbsp. tapioca flour
  • 2 tbsp. Water

 

INSTRUCTIONS:

  1. Place coconut oil, onion, carrot, and bell pepper in a stock pot. Cook the veggies until tender.
  2. Bring broth to a boil. Add cooked beans, broth, and the remaining ingredients (except tapioca flour and 2 tbsp. water) to the vegetables.
  3. Bring that mixture to a simmer and cook approximately 15 minutes.
  4. Puree 1 quart of the soup in a blender and put back into the pot.
  5. Combine the tapioca flour and 2 tbsp. water in a separate bowl.
  6. Add the tapioca flour mixture to the bean soup and bring to a boil for 1 minute.
