INGREDIENTS
- 1 1/2 cups (258 g) cooked black beans or 1 can (15 ounces, or 425 g), rinsed and drained
- 1 can (14 ounces, or 400 ml) light coconut milk
- 1/4 cup (20 g) unsweetened cocoa powder
- 3 tablespoons (60 g) agave nectar
- 2 teaspoons vanilla extract
INSTRUCTIONS
- In a food processor, combine the cooked black beans, light coconut milk, unsweetened cocoa powder, agave nectar, and vanilla extract.
- Process the mixture until smooth. Note that there may be some black flecks from the black bean skins, which can resemble chocolate flecks. If desired, you can strain the mixture through a cheesecloth to remove any remaining flecks.
- Fill your frozen pop molds about seven-eighths full with the mixture.
- Place the molds in the freezer and let them freeze for several hours or overnight until firm.
- Once the popsicles are completely frozen, remove them from the molds and they are ready to be served.
