Ingredients:
FOR STEW:
- 480g diced stewing steak
- 2 garlic clove finely chopped
- 1 tablespoon flour
- 1 tablespoon olive oil
- 1 chopped onion
- 2 chopped carrots
- cup red wine
- Salt and pepper
- 1 ½ cup water
FOR ROASTED MASHED GARLIC & POTATOES:
- 3-4 garlic cloves
- 2 potatoes
- 1 tablespoon butter
- 2 tablespoon milk
Instructions:
- Coat the steak with flour, garlic, salt and pepper.
- Pour olive oil in pan and stir in onions until translucent. Now add steak and fry until browned nicely.
- At this stage, add water, wine and carrots.
- Turn flame to low and let simmer for about 2 hours.
- Preheat oven to 350F.
- Peel and chop potatoes and add in boiling water. Drain completely and mash them.
- Wrap garlic and potatoes in foil and place in preheated oven for 10 to 15 minutes to roast.
- Add milk and butter in garlic and potatoes and whip to get creamy texture.
- Serve the stew over garlic potato mesh.
Note: Beef stew is a make ahead dish. When completely cool, cover it tightly and refrigerate for up to 3days. Beef stew can be stored in freezer in an airtight container. It can be kept in freezer for up to 3 months. Stew can be reheated on the stovetop or in microwave.
