Ingredients:

  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) pinto beans, drained and rinsed
  • 1 cup salsa
  • 1 cup shredded Mexican blend cheese
  • 1/2 teaspoon cumin
  • 1/2 teaspoon chilli powder
  • Salt and pepper, to taste
  • 2 green onions, thinly sliced
  • 1 jalapeno pepper, seeded and chopped (optional)
  • Tortilla chips, for serving

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, mix together the black beans, pinto beans, salsa, cheese, cumin, chili powder, salt, pepper, green onions, and jalapeno pepper (if using).
  3. Spread the bean and cheese mixture evenly into a 9-inch baking dish.
  4. Bake for 15-20 minutes or until the cheese is melted and bubbly.
  5. Serve the Bean and Cheese Dip warm with tortilla chips for dipping.
