INGREDIENTS

  • 4 boneless pork loin chops (6 ounces each)
  • ¾ teaspoon salt, divided
  • ½ teaspoon pepper
  • 3 tablespoons butter, divided
  • 1 large red onion, halved and thinly sliced
  • ⅔ cup balsamic vinegar
  • 2 teaspoons brown sugar
  • ½ teaspoon dried rosemary, crushed

 

INSTRUCTIONS

  1. Sprinkle the pork chops with ½ teaspoon salt and pepper. In a large skillet, brown the chops in 1 tablespoon butter over medium-high heat. Remove the chops from the skillet and keep them warm.
  2. In the same skillet, sauté the thinly sliced red onion in 1 tablespoon butter until tender and caramelized.
  3. Stir in the balsamic vinegar, brown sugar, dried rosemary, and the remaining ¼ teaspoon salt. Bring the mixture to a boil, then reduce the heat and let it simmer until the liquid is reduced by half, creating a thick glaze.
  4. Return the pork chops to the skillet and cook them uncovered over medium heat for 4-6 minutes on each side, or until a thermometer inserted into the thickest part of the chops reads 145°F (63°C).
  5. Remove the pork chops from the skillet and transfer them to a serving plate. Let them rest for 5 minutes before serving.
  6. Stir the remaining 1 tablespoon butter into the skillet until melted, creating a smooth and glossy sauce.
  7. Serve the Balsamic Glazed Pork Chops with the caramelized onion and balsamic glaze drizzled over the top.
