INGREDIENTS

  • 2 cupfuls flour
  • 1/2 teaspoon salt
  • 2 bundles rhubarb
  • 1/2 cupful Crisco (shortening)
  • 1 lemon
  • 6 tablespoonfuls brown sugar
  • Water
  • 1/2 cupful granulated sugar

 

INSTRUCTIONS

  1. Preheat your oven to a moderate temperature.

 

Preparing the Pastry:

  1. Sift the flour, salt, and baking powder together in a mixing bowl.
  2. Rub the Crisco into the dry ingredients until the mixture resembles fine crumbs.
  3. Gradually add cold water to the mixture, mixing until it forms a smooth paste.

 

Assembling the Pudding:

  1. Roll out two-thirds of the pastry on a floured surface until it is twice the circumference of the top of a pudding mold.
  2. Grease the inside of the pudding mold with granulated sugar, which will create a caramelized coating when baked.
  3. Gently place the rolled pastry into the mold, pressing it evenly against the sides to create the base of the pudding.

 

Preparing the Filling:

  1. Cut the rhubarb into pieces about an inch long.
  2. Add the cut rhubarb to the center of the pastry in the mold.
  3. Grate the rind of half of the lemon and add it to the rhubarb.
  4. Squeeze the juice from the lemon half and strain it over the rhubarb.
  5. Sprinkle the brown sugar over the rhubarb and add 3 tablespoonfuls of water.

 

Finishing the Pudding:

  1. Roll out the remaining pastry that was set aside. Wet the edges of the rolled pastry and place it on top of the mold to create the lid.
  2. Cover the mold with a piece of greased paper.
  3. Bake the pudding in the preheated oven for approximately one hour or until it is nicely browned and cooked through.

 

Serving the Baked Rhubarb Pudding:

  1. Once baked, remove the pudding from the oven and carefully turn it out onto a serving plate.
  2. Serve the Baked Rhubarb Pudding warm, accompanied by hot milk, for a comforting and satisfying dessert.
