INGREDIENTS

  • 1 cup ranch salad dressing
  • ¼ cup salsa
  • 1 tablespoon lime juice
  • 3 tablespoons minced fresh cilantro
  • 2 cups cubed cooked chicken breast
  • 1 envelope taco seasoning
  • 1 prebaked 12-inch thin pizza crust
  • ½ cup chopped tomato
  • ½ cup finely chopped red onion
  • 2 cups (8 ounces) shredded part-skim mozzarella cheese
  • 2 cups shredded lettuce
  • 2 medium ripe avocados, peeled and thinly sliced

 

INSTRUCTIONS

  1. In a blender or food processor, combine the ranch salad dressing, salsa, lime juice, and minced cilantro. Cover and process on high for 1-2 minutes or until the mixture becomes smooth. Set aside.
  2. In a small bowl, combine the cubed cooked chicken breast with the taco seasoning, ensuring the chicken is well coated. Set aside.
  3. Place the prebaked 12-inch thin pizza crust on an ungreased 12-inch pizza pan.
  4. Spread the salsa mixture (prepared in Step 1) evenly over the crust.
  5. Sprinkle the seasoned chicken mixture (prepared in Step 2) over the salsa mixture.
  6. Add the chopped tomatoes, finely chopped red onions, and shredded mozzarella cheese to the pizza, distributing them evenly.
  7. Bake the pizza at 425°F for 17-20 minutes or until the crust turns golden brown and the cheese melts to a bubbly consistency.
  8. Let the pizza stand for 10 minutes before cutting into slices.
  9. Sprinkle the shredded lettuce over the pizza and top with thinly sliced avocado.
  10. Serve the Baja Chicken Taco Pizza immediately and enjoy!
