- 4 cups chicken broth
- 1/4 cup uncooked quinoa

- 3 tbsp. lemon juice
- Handful fresh dill, chopped
- Shredded roasted chicken (optional)
INSTRUCTIONS:
- Bring the chicken broth to a boil in a saucepan.
- Add the quinoa to the broth and cook until tender.
- Season the broth and quinoa with salt and pepper to taste.
- Reduce the heat to low and let the mixture simmer.
- In a separate bowl, whisk together the lemon juice and eggs until smooth.
- Take about 1 cup of the hot broth from the saucepan and slowly add it to the egg/lemon mixture while whisking continuously to temper the eggs.
- Pour the egg mixture back into the saucepan, stirring until the soup becomes opaque and thickens.
- Add the chopped dill and season with additional salt and pepper as needed.
- If desired, add shredded roasted chicken to the soup for extra protein and flavor.
