Avgolemono – Greek lemon chicken soup

Serves :4

 

INGREDIENTS:

  • 4 cups chicken broth
  • 1/4 cup uncooked quinoa
  • Salt and pepper
  • 3 eggs
  • 3 tbsp. lemon juice
  • Handful fresh dill, chopped
  • Shredded roasted chicken (optional)

 

INSTRUCTIONS:

  1. Bring the chicken broth to a boil in a saucepan.
  2. Add the quinoa to the broth and cook until tender.
  3. Season the broth and quinoa with salt and pepper to taste.
  4. Reduce the heat to low and let the mixture simmer.
  5. In a separate bowl, whisk together the lemon juice and eggs until smooth.
  6. Take about 1 cup of the hot broth from the saucepan and slowly add it to the egg/lemon mixture while whisking continuously to temper the eggs.
  7. Pour the egg mixture back into the saucepan, stirring until the soup becomes opaque and thickens.
  8. Add the chopped dill and season with additional salt and pepper as needed.
  9. If desired, add shredded roasted chicken to the soup for extra protein and flavor.
  10. Serve the soup hot and garnish with additional dill if desired.
