Apple pie is an iconic dessert with a rich history dating back centuries. INGREDIENTS

  • 4 tablespoons unsalted butter
  • 2 large Granny Smith apples, peeled, cored, and diced into 1/4-inch cubes
  • 1/2 teaspoon ground cinnamon
  • 1/8 teaspoon salt
  • Juice of half a lemon (about 1 1/2 tablespoons)
  • 1/4 cup all-purpose flour
  • 1/4 cup + 2 tablespoons packed brown sugar
  • 1/4 cup chopped walnuts
  • 1 can (12.4 oz) Pillsbury refrigerated cinnamon rolls
  • Whipped cream
  • Caramel-flavored syrup

 

INSTRUCTIONS

  1. Heat the oven to 400°F (200°C). Lightly spray 8 regular-size muffin cups with cooking spray.
  2. In a 10-inch skillet, melt 2 tablespoons of butter over medium-high heat. Add the diced apples and cook for about 5 minutes, stirring occasionally, until they soften.
  3. Sprinkle the apples with 2 tablespoons of brown sugar, ground cinnamon, and salt. Cook for an additional 5 minutes or until the apples are tender. Stir in the lemon juice.
  4. Meanwhile, in a small bowl, mix together the remaining 2 tablespoons of butter, all-purpose flour, 1/4 cup of brown sugar, and chopped walnuts using a fork or your hands until crumbly. Set the mixture aside.
  5. Separate the cinnamon rolls into 8 pieces. Flatten each piece into a 4-inch round and place one in each muffin cup. Divide the cooked apple filling evenly onto each roll in the muffin cups. Then, divide the flour mixture evenly over the apples.
  6. Bake the cupcakes in the preheated oven for 10 to 12 minutes or until bubbly and the tops are lightly browned. Allow them to cool slightly before removing them from the muffin cups.
  7. After cooling completely for about 30 minutes, serve the cupcakes topped with whipped cream and a drizzle of caramel-flavored syrup.
