INGREDIENTS
- 3 green apples, 2 diced and 1 thinly sliced for garnish
- 7 oz. (200 g) radicchio, thinly sliced
- 10 1/2 oz. (300 g) chicken breast
- 3 1/2 oz. (100 g) focaccia, cut into cubes
- 1/4 cup (20 g) sliced almonds
- 1/3 cup plus 1 1/2 tbsp. (100 ml) extra-virgin olive oil
- 1 tbsp. plus 1 tsp.(20 ml) vinegar
- salt and pepper
INSTRUCTIONS
- Heat the oven to 350°F (180°C).
- Season the chicken with salt and pepper, then drizzle with olive oil. Bake for 18 to 20 minutes (alternatively, you can grill it). Let cool, then cut into cubes.
- Spread the focaccia on a baking sheet and toast in the oven for 5 minutes.
- Put the radicchio in a bowl. Dress with the olive oil and vinegar and season with salt and pepper.
- Add the diced apples, chicken, focaccia, and almonds to the bowl with the radicchio.
- Toss the salad together until all ingredients are evenly coated with the dressing.
- Distribute the salad among individual bowls and garnish with the sliced apples.
- Serve and enjoy!
