INGREDIENTS

For Dressing:

  • 1 tablespoonful Crisco (shortening)
  • 1 teaspoonful mustard
  • 1 teaspoonful sugar
  • 1/2 teaspoonful salt
  • 1/4 teaspoonful white pepper
  • 2 eggs
  • 4 tablespoonfuls lemon juice
  • 1 cupful whipped cream

 

For Salad:

  • 1 quart chopped apples
  • 1 pint diced celery
  • 1-1/2 cupfuls blanched and shredded almonds
  • 2/3 cupful rolled pecan nut meats

 

INSTRUCTIONS

For Salad:

  1. In a mixing bowl, combine the chopped apples, diced celery, blanched and shredded almonds, and rolled pecan nut meats. Mix them well to evenly distribute the ingredients.

 

For Dressing:

  1. In a saucepan, melt the Crisco over low heat.
  2. Add the mustard, sugar, salt, and white pepper to the melted Crisco. Stir the ingredients to combine.
  3. In a separate bowl, beat the egg yolks well. Add the beaten egg yolks to the saucepan and continue to stir.
  4. Pour in the lemon juice and continue cooking the mixture in a double boiler until it thickens. This process helps to create a smooth and creamy texture.
  5. Once the mixture has thickened, remove it from the heat and allow it to cool slightly.
  6. In another bowl, beat the egg whites until they form stiff peaks.
  7. Gently fold the beaten egg whites into the cooled mixture to create a light and airy texture.
  8. Chill the dressing in the refrigerator until it’s cold.
  9. Just before serving, add the whipped cream to the chilled dressing, folding it in gently to maintain the creamy consistency.

 

Assembling the Salad:

  1. Prior to serving, combine the chilled dressing with the mixed apples, celery, and nut meats. Toss the salad gently to ensure the dressing is evenly distributed.
