Sushi is a Japanese origin dish consisting of small balls or rolls of cold rice which are vinegar flavored. These cold rice are then garnished with vegetables, egg, or raw seafood and folded into shape of small ball. It is made with short grain white rice and very often seafood is used in its preparation. Many types of sushi are vegetarian too. It is famous worldwide but some people do not like having raw fish in their sushi. When sushi got introduced in America it got transformed. In America, sushi that is made with cooked ingredients is known as American Sushi. The type of rice used in both sushi also differ. The American sushi may have brown or white rice while the Japanese sushi is traditionally made with short grain white rice. Tuna is the most commonly used fish in American sushi while Japanese sushi is made of eel most often. Both these types also differ in preparation. American sushi is a combination of cooked fish/crab along with veggies and rice unlike uncooked ingredients in Japanese sushi. Here is a recipe of sushi made with crab, rice, avocado and cucumber.

Ingredients:
- 200 g crab meat
- Prepared sushi ricer
- 1 sliced avocado
- 1 cucumber thinly sliced
- 3 sheets norie
- 4 tablespoon rice vinegar
- 2 tablespoons sugar
- 1 teaspoon salt.
Instructions:
- Wash 1 ½ cup rice and drain the water. Add rice along with 1 ½ cup water in a pot. Cover the pot and set aside for about 20 minutes.
- For the rice seasoning prepare sushi vinegar. Mix rice vinegar, sugar and salt. Stir until salt and sugar are dissolved.
- Now put the pot of rice on stove over high heat. Let the water boil then turn the heat to low and et cook for about 20 minutes. Then turn off the heat and keep the pot covered for another 10 minutes.
- Now spread the rice on a wide dish and add sushi vinegar. Keep folding the rice so the vinegar evenly coats the rice. Fan the rice so the excess liquid evaporates.
- Toast the nori over open flame quickly waving its all sides. Break the nori in clean halves by folding it over.
- Slice up 1 avocado and squeeze some lemon juice to prevent these from turning brown.
- Take out the crab from its shell and stir fry gently so you don’t end up breaking apart the meat.
- Next, take a bamboo mat and wrap it up in plastic sheet. Place half sheet of nori on it and spread the rice on it. Now flip it over so the rice face down. Put the crabs on upward side of nori along with avocado and cucumbers. Now roll the mat carefully and give the roll nice shape.
- Now take a sharp wet knife and cut the roll in halves. Wet the knife with paper towel after each cut so the rice doesn’t stick to it.
- Place these on a plate and serve..
