I am a self-taught cook. I started cooking around 18 years old. I stood in the kitchen and watched my mother, who was my biggest inspiration at the time, cook.

Okay, I admit it: I’d probably eat dog food if you curried it. But with a green salad, this makes a great light supper whether you’re a devoted curry lover or not.

Yield: 1 serving, with 3 grams of carbohydrates, a trace of fiber, and 23 grams of protein.

 

INGREDIENTS 

  • 1 tablespoon butter
  • 1/4 teaspoon curry powder
  • 1/2 clove garlic, crushed
  • 3 eggs
  • 1 tablespoon heavy cream
  • 3 slices bacon, cooked until crisp

 

INSTRUCTIONS 

  1. Melt 1 tablespoon of butter in a heavy skillet over medium-low heat.
  2. Add 1/4 teaspoon of curry powder and 1/2 clove of crushed garlic to the skillet. Saute for a minute or two.
  3. Beat 3 eggs and 1 tablespoon of heavy cream together in a bowl.
  4. Pour the egg mixture into the skillet and scramble until the eggs are set.
  5. Crumble 3 slices of cooked bacon over the top of the eggs.
  6. Serve immediately.
