This will open your eyes in the morning! It’s one of my favorites-I enjoy breathing fire.
Yield: 1 serving, with 5 grams of carbohydrates and 1 gram of fiber, for a total of 4 grams of usable carbs and 25 grams of protein.
INGREDIENTS
- 1 tablespoon butter
- 2 eggs, beaten
- 2 ounces jalapeno Jack cheese, shredded or sliced
- 2 tablespoons salsa
- Hot sauce (optional)
INSTRUCTIONS
- Make your omelet according to Dana’s Easy Omelet Method, placing the filling over half of your omelet when you get to step 6.
- Cover, turn the burner to low, and cook until the cheese is melted (3 to 4 minutes).
- Follow the directions to finish making the omelet.
- Top with salsa and hot sauce (if using).
