INGREDIENTS
- 1 cup wheat berries
- 1/2 tsp. salt
- 3 tbsp. olive oil
- 1 large yellow onion, sliced
- 1 small red bell pepper, sliced
- 1 small green bell pepper, sliced
- 1 small yellow bell pepper, sliced
- 3 tbsp. tamari soy sauce
- 2 tbsp. chopped fresh flat-leaf parsley
- black pepper
- fresh parsley sprigs, to garnish
INSTRUCTIONS
- Rinse the wheat berries under cold water, then put them in a saucepan with the salt and plenty of water. Bring to a boil, then simmer for 50 minutes, or until tender. Drain and set aside.
- Meanwhile, heat the olive oil in a large skillet and cook the onion for about 8 minutes, until golden.
- Add the sliced peppers and continue to cook until they are soft.
- Toss the onions and peppers into the wheat berries with the tamari, chopped parsley, and plenty of black pepper.
- Serve garnished with parsley sprigs.
